Guest Recipe: Chicken with Goji Berries

This dish will warm the Stomach, supplement Qi, nourish Blood and strengthen the Liver and Kidneys. Great for recovering strength after childbirth.

Ingredients:

2 tbsp olive oil

2-3 cloves of garlic, peeled and minced

1 (1/2" to 1") piece of fresh ginger peeled and minced

1 roasting chicken, skinned and cut up, or 3-4 lbs of skinless legs/breasts

2 green onions chopped into 1/2 inch pieces with roots and rough tips discarded

3-4 tbsp rice wine or dry sherry

2 tbsp soy sauce or coconut aminos

2 tbsp goji berries

1 1/2-2 cups water or stock (vegetable or bone broth)

2 tsp dark sesame oil

Method:

  1. Heat oil in the pan and add the garlic and ginger. Cook until fragrant.

  2. Add the chicken, garlic, ginger, green onions, wine, soy sauce, goji berries and stock to the pot.

  3. Bring the mixture to a boil.

  4. Cover and lower the heat to simmer. Cook for 30 minutes or until the chicken is cooked through.

  5. Garnish with sesame oil to finish

  6. Serve in a bowl with broth or on top of rice with broth as a dressing.


Why we like this recipe:

Goji Berry is easy to find even in most grocery stores at this point. Even if you don't use all that you buy within this recipe, you can easily use it up. Things like goji tea, topping for oats, thrown into soups and infusions, or just a snack!


When to eat:

Based on these ingredients, I would enjoy this about the week 3 mark and beyond in postpartum.
