Nourishing Kitchari Base


Kitchari is a pure and balancing food. It is a nutrient-dense perfect protein that is warming and easily digestible - this is the perfect thing to stock up on! Much like the congee recipe, it can be cooked with rotating seasonal vegetables and spices and has a lot of flexibility to add more spice and change things around. There are a zillion kitchari recipes. Pretty straightforward to prepare - just soak the rice and mung (ideally the the night before but a few hours is good too) and then rinse well before cooking.


INGREDIENTS

1 Cup Basmati Rice, Organic

1⁄2 Cup Split Mung Bean/Dal

1 Can Coconut Milk (optional, if not add more stock, water or bone broth)

1 Cups Chicken Stock

3 Cups Bone Broth

1 TBS Kitchari Spice Miz

2 Cups seasonal vegetables (chopped - sweet potato, carrot, squash would all be great. Leafy greens too!)

1 TSP of Good salt -you may want to add more in the end.

Fresh cilantro or parsley to garnish (optional)

Add LOTS of Ghee ( 2 TBS), Butter, or Sesame Oil

STOVETOP METHOD

  1. In a large soup pot, melt ghee (butter or oil) and add spice mix and cook for about a minute.

  2. Add salt, rice and mung bean and cook together for another minute or so

  3. Add the liquids (except about a cup) to the pot, gently bring to an easy boil. Reserve the extra cup for later if needed to loosen up porridge if you like.

  4. Reduce to a low simmer,

  5. Add hard starchy veggies (if using them)

  6. Partially cover and simmer for about 20 minutes occasionally stirring.

  7. Check consistency after 20 min and add water if needed (Dal needs to be submerged in liquid).

  8. Quick-cooking vegetables like greens, asparagus etc. can go in now and partially cover to simmer for 7 - 10 min.

  9. When serving, top with a variety of toppings such as marinated chicken thighs, more veggies, soft cooked egg etc.

  10. Be sure to add lots of ghee and feel free to add more spices, salt and pepper to adjust to taste.

  • Kitchari should have a soupy, soft consistency similar to porridge.
