Riced Frozen Veggies

This is one of favorite go to's. While it's popular to rice cauliflower or broccoli, we are going to avoid these for a little while - cruciferous veggies are known to create lots of gas. It's common to use a food processor to rice veggies but I don't care for the mess and dishes so we recommend using the box grater for this. SO many less dishes. Vegetables that work well riced tend to be more firm.

  • Sweet Potato

  • Beet

  • Carrot

  • Butternut Squash

  • Parsnips

  • Turnip

EQUIPMENT

  • Box Grater (if opting not to use a food processor)

  • Organic Multi Purpose Mesh (Nut Mylk) Bag (this comes in the 32 week delivery)

  • Parchment Paper

  • Cookie Sheet (a size that will easily slide into your freezer!)

METHOD

  1. Peel food of your choice

  2. Using the whole food or larger pieces, grate food.

  3. Put grated food in mesh bag, squeeze out excess liquid (don't waste the liquid, use it up in drinks, soups, sauces etc)

  4. Empty contents of bag onto parchment paper that is sitting on a cookie sheet. Spread out as much as possible. You'll find it will clump a bit - this is ok, but we just don't want large clumps.

  5. Place in freezer. Once frozen, transfer to another freezer container.

NOTES

If you don't have a cookie sheet that is small enough to fit in your freezer, you can really use any flat surface to support the parchment paper.
